Cooking guide (fast & delicious)
Grill / Yakiniku: Preheat hotplate to high. Lightly oil grill. Season or glaze lightly. Sear 30–60s per side to caramelise. Rest 1 minute.
Cast-iron: High heat, a film of neutral oil. Quick sear, baste with beef fat or butter. Finish with salt, serve immediately.
Serving: Pair with rice, crisp lettuce, sesame salt, or tare. Add a squeeze of lemon for contrast.
