The Denver Steak or Zabuton Steak is an exceptionally marbled steak that is cut from the upper portion of the chuck or the shoulder underblade, which is considered the most heavily marbled muscle on the entire Carcass.

Meet the “hidden gem” steak: Denver (also known as Chuck Tail Flap) — cut from the chuck, but surprisingly tender with a big, beefy flavour and that MBS9+ buttery melt you want from full blood Wagyu.
Perfect when you want the luxury vibe of a premium steak, but with a richer, more savoury personality.

 

Wagyu / Premium Grill • Pan-sear • BBQ (fast cook, big reward)

 

Cooking guide (simple + restaurant-style)

Best doneness: rare to medium (let the marbling do the work).

Grill / BBQ / Hotplate

  1. Bring to near room temp (10–15 min), pat dry.

  2. Preheat to high. Light oil on grill (not the steak).

  3. Season simply (salt is enough).

  4. Sear hard, flip once, then rest 5 minutes.

  5. Slice against the grain for max tenderness.

Cast-iron pan

  • High heat, quick sear, then rest.

  • Optional: finish with a small knob of butter/beef fat + garlic for basting.

Tip: If your Denver has a natural seam, you can slice along it after resting and serve as two “mini steaks”.

Serving ideas

  • Japanese-style: rice + sesame salt + lemon

  • Korean BBQ vibe: ssam wraps, perilla/lettuce, garlic, ssamjang

  • Modern steak plate: charred broccolini + flaky salt + chimichurri
