Wagyu / Versatile Cut • Grill • Pan-sear • Slow-cook (high flavour, high reward)

 

Cooking guide (simple + restaurant-style)

Best doneness: medium-rare to medium (lets the short rib marbling open up).

Grill / BBQ / Hotplate

  • Bring to near room temp (10–15 min).

  • Pat dry for a clean, strong sear.

  • Preheat grill to high. Lightly oil the grill, not the meat.

  • Season generously with salt (Wagyu doesn’t need much else).

  • Sear hard on both sides, then drop heat slightly to finish.

  • Rest 5–7 minutes before slicing.

  • Cut across the grain to keep it tender and juicy.

Cast-iron pan

  • Heat pan until smoking hot.
  • Quick sear each side, then lower heat to gently finish.
  • Optional: add butter or Wagyu fat + thyme/garlic for a glossy baste.

Tip: Short rib grain can run diagonally—rotate the piece if needed to ensure you’re slicing cleanly against the grain for best texture.
